Cabernet I.g.t. - Cavaliere

VARIETY:
Cabernet Sauvignon.

VINEYARDS:
Situated at an altitude of 250 metres above sea level on the south-east slope of the mountains in the upper Val d’Alpone, the thin and stony soil of these vineyards gives the fruit a concentrated intensity of flavour.

VINIFICATION:
Harvested as late as possible to allow for maximum sugar concentration, the grapes are –de-stemmed and pressed then fermented for a fortnight in small tanks. After racking, part of the wine is matured in barrels and part in stainless steel tanks. After six months, the final assemblage is made to accentuate the wine’s best characteristics.

TASTING NOTES:
Colour: intense ruby red.
Aroma: enticing, with perfumes of woodland fruits and a hint of spice and vanilla which become more complex with ageing.
Taste: a slight hint of tannin gives way to a long, velvety and full-bodied character.
Alcohol content: 12,5% vol.

FOOD MATCHING:
This wine goes well with grilled or roast red meat, all types of game and mature cheeses, particularly “Vezzena”.

SERVE:
Serve in special goblets for full-bodied red wines at a temperature of 18-20°C. Uncork the bottle at least half an hour beforehand.
