Sauvignon I.g.t. - Pozzo

VARIETY:
Sauvignon blanc.

VINEYARDS:
Situated in the high hills at an altitude of 500 metres, this is an experimental vineyard which produces a very special wine. The grapes are harvested between the end of September and beginning of October, depending on the vintage.

VINIFICATION:
The grapes are pressed gently and the must is cold settled. The wine is fermented for at least six months in two to three year old barrels, avoiding new oak which might maks the delicate grape aromas.

TASTING NOTES:
Colour: bright yellow.
Aroma: delicate but intense, reminiscent of spices and cinnamon with a clear hint of vanilla indicating the barrel ageing.
Taste: full-bodied, long, with a spicy flavour blending with the smokiness of the wood.
Alcohol content: 12% vol.

FOOD MATCHING:
Strong tasting first courses, risotto, mature and strong cheeses.

SERVE:
Serve in tulip-shaped goblets at a temperature of 10-12°C
