Soave Classico D.O.C. - Vicario

VARIETY:
Garganega.

VINEYARDS:
Situated on the rolling volcanic hills of the Monteforte d’Alpone district at an altitude of between 100 and 150 metres above sea level. To obtain Vicario, the pergolas with the best exposure (south-east) are chosen and the fruit is vinified separately in about mid-October depending on the ripeness of the harvest.

VINIFICATION:
The grapes are pressed gently using special presses at the beginning of October. The must is cold settled and fermented in stainless steel tanks at a controlled temperature. Part of the must is also fermented in barrels where it remains for about six months. The wines are then blended to accentuate the characteristics of this vineyard selection.

TASTING NOTES:
Colour : intense yellow with greenish lights.
Aroma: full and complex with perfumes of violets and elder-flower accompanied by a slight hint of oak ageing.
Taste: full-bodied and lively with good length and a hint of almonds on the finish.
Alcohol content: 12,5% vol.

FOOD MATCHING:
First courses, fish, shellfish, white meat and soft cheeses.

SERVE:
Serve in tulip-shaped goblets at a temperature of 12°C.
